Ingredients:
Strawberry Sauce:
• 125 mL (1/2 cup) granulated sugar
• 30 mL (2 tbsp) water
• 45 mL (3 tbsp) lemon or orange juice
• 500 mL (2 cups) Europe's Best® Country Strawberries (sliced or whole), thawed
Waffles:
• 8 waffles (1 pkg) Eggo® Plus Fibre waffles, toasted, as per package directions
• 250 mL (1 cup) ricotta cheese or plain yogourt
• 30 mL (2 tbsp) maple syrup, honey or brown sugar (optional)
Preparation:
Strawberry Sauce:
1. Combine sugar and water in a medium skillet. Cook on medium heat, stirring, just until sugar dissolves. Brush any crystals down sides of pan with a pastry brush dipped in cold water. Cook, without stirring, for 5-8 minutes, or until mixture turns a caramel colour. Add juice. Bring to boil and stir until smooth. Add strawberries and let mixture return to boil. Remove from heat.
Assembly:
2. Place toasted waffle on plate. Combine ricotta cheese with maple syrup, if desired. Spread 1/4 cup (50 mL) ricotta cheese on waffle and top with 1/4 cup (50mL) strawberry sauce. Top with second waffle and drizzle with another 1/4 cup (50 mL) sauce.
