Spiced Fruit Salad Recipe

Spiced Fruit Salad

For a taste of the tropics this summer, bathe strawberries, grapefruit and orange segments, pomegranate seeds and dried Goji berries in a lightly-spiced citrus syrup. Serve over vanilla ice cream for a yummy sunny day dessert.

Preparation Time: 35 minutes
Cook Time: No cooking time required
Serving: 8 servings

Ingredients:

Fruit:
•   300 g (1/2 bag) Europe's Best® Sliced Country Strawberries, frozen
•   2 grapefruits, peeled, cut in segments
•   3 oranges, peeled, cut into segments
•   75 mL (1/3 cup) pomegranate seeds
•   50 mL (1/4 cup) dried Goji berries or cranberries

Syrup:
•   75 mL (1/3 cup) orange juice
•   50 mL (1/4 cup) maple syrup or honey
•   1 mL (1/4 tsp) ground cinnamon
•   1 mL (1/4 tsp) ground ginger
•   Pinch each of ground cloves and nutmeg

Garnish:
•   30 mL (2 tbsp) chopped pistachios or slivered almonds (optional)

Preparation:


1.  Place Europe’s Best Sliced Country Strawberries in a serving bowl. Let defrost while preparing grapefruit and oranges. Add grapefruit and orange segments, pomegranate seeds and berries. Toss gently to combine.
2.  In a bowl, whisk together juice, syrup, cinnamon, ginger, cloves and nutmeg. Pour over fruit. Let stand from 30 minutes to two hours. Garnish with chopped pistachios.

Tips:

•   Goji berries are available, dried, in supermarkets, health food stores and bulk food stores. They add a slightly tart flavour to dishes. Use in fruit and vegetable salads, soups, cereal and trail mix.
•   Extra pomegranate seeds can be frozen for use in salads, beverages and garnishes.
