Ingredients:
Beans:
• 500g (1 pkg) Europe's Best® Green and Yellow Beans, frozen
• 15 mL (1 tbsp) olive oil
• 4 cloves of garlic, thinly sliced
• salt and pepper to taste
Rub:
• 15 mL (1 tbsp) fresh rosemary, chopped
• 15 mL (1 tbsp) lemon zest
• 1 clove of garlic, minced
• 1 mL (1/4 tsp) red pepper flakes (optional)
• 6 oz / 170 g (4) salmon fillets
Preparation:
Beans:
1. Cook beans in boiling water for 1 minute, just until softened. Drain and rinse in cold water. Slice beans into 1/2" (2 cm) pieces. Dry well.
2. Heat olive oil in a large non-stick skillet over medium heat. Add garlic and cook until soft, about 1-2 minutes. Add beans, continue cooking until coated with olive oil and beans are heated through. Season with salt and pepper.
Rub:
3. Combine all ingredients. Reserve.
Salmon:
4. Preheat oven to 400ºF (200ºC). Pat rub over salmon. Place on prepared baking sheet lined with parchment paper and bake for 15-20 minutes or until cooked through.
Assembly:
5. Place beans over salmon.
Tips:
• Serve the beans as a side dish with chicken or beef.
