Peaches, Bocconcini and Prosciutto Salad Recipe

Peaches, Bocconcini and Prosciutto Salad

Peaches are a delicious way to dress up a summer salad! Combine sliced peaches with mixed greens, diced prosciutto, bocconcini cheese and chopped basil. Drizzle with our peach-kissed vinaigrette, and enjoy.

Preparation Time: 10 minutes
Serving: 6 to 8 meal sized servings

Ingredients:

Salad:
•   2L (8 cups) mixed salad greens (spring mix, arugula, baby spinach etc.)
•   90g (3 oz) prosciutto or bacon, cooked and diced
•   500mL (2 cups) Europe’s Best® Sun Ripe Harvest Peaches, thawed
•   250mL (1 cup) pearl sized bocconcini cheese, or regular bocconcini, sliced
•   50mL (1/4 cup) basil, chopped

Vinaigrette:
•   75mL (1/3 cup) white balsamic vinegar or apple cider vinegar
•   1 clove garlic
•   15mL (1 tbsp) honey
•   50mL (1/4 cup) Europe’s Best Sun Ripe Harvest Peaches, thawed
•   Salt and pepper to taste
•   30mL (2 tbsp) olive oil

Preparation:


1.  Combine first 5 ingredients of the vinaigrette in blender. Add olive oil and blend until smooth. Arrange salad ingredients on platter and drizzle with dressing. Refrigerate any remaining dressing.
