Ingredients:
• 500 g (1 bag) Europe's Best® Mediterranean Diced Delite, frozen
• 15 mL (1 tbsp) olive oil
• 1 mL (1/4 tsp) salt
• 1 mL (1/4 tsp) pepper
• 15 mL (1 tbsp) prepared pesto
• 4 bagels, halved crosswise
• 375 mL (1 1/2 cups) grated Mozzarella or Fontina cheese
• 75 mL (1/3 cup) grated Parmesan cheese
• 30 mL (2 tbsp) chopped fresh basil
Preparation:
1. On a parchment-lined shallow baking dish or baking sheet, toss Europe’s Best Mediterranean Diced Delite with olive oil, salt and pepper. Roast in a preheated 210 °C (425 °F) oven for 25 minutes, stirring twice, until vegetables are cooked and juices have evaporated. Remove from oven and stir in pesto. Cool 10 minutes.
2. On a separate parchment-lined baking sheet, arrange bagel halves, cut side up. Sprinkle Mozzarella cheese over bagel base. Spoon roasted vegetables over cheese. Top each evenly with Parmesan cheese.
3. Bake in a preheated 210 °C (425 °F) oven for 12 to 15 minutes or until cheese is bubbly around edges. Sprinkle with basil.
Make Ahead:
Roast vegetables up to 4 hours earlier. Pizza Bagels can be assembled, covered and refrigerated up to 6 hours ahead of time. Cooking time may need to be increased 2 to 3 minutes.
