Mediterranean Pasta Sauce Recipe

Mediterranean Pasta Sauce

This makes enough sauce for 500 g (1 lb) pasta, cooked.

Preparation Time: 15 minutes
Cook Time: 30 minutes
Serving: 750 mL (3 cups)

Ingredients:

•   30 mL (2 tbsp) olive oil
•   1 onion, chopped
•   2 cloves garlic, chopped
•   500 g (1 bag) Europe's Best® Mediterranean Diced Delite, frozen
•   500 mL (2 cups) prepared tomato sauce or chopped canned tomatoes
•   250 mL (1 cup) vegetable or chicken stock or water
•   30 mL (2 tbsp) chopped fresh basil or 5 mL (1 tsp) dried
•   2 mL (1/2 tsp) dried oregano
•   2 mL (1/2 tsp) granulated sugar
•   2 mL (1/2 tsp) salt
•   1 mL (1/4 tsp) ground black pepper
•   30 mL (2 tbsp) each chopped fresh parsley and basil

Preparation:


1.  In a large saucepan, heat oil over medium heat. Add onion and garlic and cook for 2 minutes or until softened.
2.  Add Europe’s Best Mediterranean Diced Delite, tomato sauce, stock, basil, oregano, sugar, salt and pepper. Bring to a boil. Reduce heat to medium and simmer uncovered for 20 to 22 minutes or until thickened. Season to taste. Stir in parsley and basil.

Variations:
Mediterranean Pasta Sauce with Mushrooms: Add 500 mL (2 cups) sliced mushrooms with onion and garlic and cook an extra minute.
Mediterranean Pasta Sauce with Sausages: Add 250 g (8 oz) sweet or hot Italian sausage meat (remove meat from sausage casing by pushing from sausage casing) with onion and garlic and cook for 4 extra minutes, breaking up sausage.

Make Ahead:
Sauce can be made, covered and refrigerated one day ahead. For a slightly thinner sauce, add 1/3 cup (75 mL) pasta cooking water.
