Last Minute Vegetable Chow Mein Recipe

Last Minute Vegetable Chow Mein

Serve with grilled chicken or pork. Look for chow mein noodles n the produce section of supermarkets. If you can’t find them, substitute other fresh noodles – adjusting the cooking time as needed.

Preparation Time: 15 minutes
Cook Time: 5 minutes
Serving: 4 to 5 servings

Ingredients:

•   600 g (1 bag) Europe's Best® Zen Garden, Frozen
•   250 g (8 oz) fresh chow mein noodles, broken in shorter lengths

Sauce:
•   75 mL (1/3 cup) orange juice
•   45 mL (3 tbsp) tomato sauce or ketchup
•   45 mL (3 tbsp) oyster or hoisin sauce
•   30 mL (2 tbsp) soy sauce
•   30 mL (2 tbsp) lime or lemon juice
•   15 mL (1 tbsp) toasted sesame oil

Garnishes:
•   45 mL (3 tbsp) chopped fresh cilantro or parsley (optional)
•   2 green onions, chopped
•   10 mL (2 tsp) toasted sesame seeds

Preparation:


1.  For sauce, in a bowl, combine orange juice, tomato sauce, oyster sauce, soy sauce, lime juice and sesame oil. Set aside.
2.  In a large amount of boiling lightly salted water in a large saucepan, add Europe’s Best Zen Garden and noodles. Cover, bring to a boil and cook for 2 minutes until noodles and vegetables are just cooked. Do not overcook. Drain well, shaking off excess water.
3.  Turn into a large serving bowl. Add sauce mixture and toss to coat noodles. Sprinkle with cilantro, onions and sesame seeds. Serve hot or at room temperature.

Tips:

•   Wrap any leftover noodles well and refrigerate for up to two days or freeze for up to two weeks.
