Adding fruit to your dessert menu is a terrific way to continue to do good things for yourself and your family. Europe’s Best® Fruit Essentials TM/MC Berry Cherry Medley frozen fruit can help bring a vibrant, scrumptious and sophisticated end to any meal.
Preparation Time: 30 minutes
Cook Time: 20 minutes
Freezing: crepes, unfilled, excellent; filled, not recommended
Serving: 8 crepes
Ingredients:
Crepes:
• 300mL (1¼ cups) milk
• 2 eggs
• 30mL (2 tbsp) melted butter
• 250mL (1 cup) All Purpose Flour
• pinch salt
• 50mL (¼ cup) sugar
• butter for greasing pan
Fruit Filling:
• 500g (1 bag) Europe’s Best® Fruit Essentials TM/MC Berry Cherry Medley, frozen
• 50mL (¼ cup) sugar
• 125mL (½ cup) berry juice such as cranberry, blueberry, etc.
• 22mL (1 ½ tbsp) cornstarch
• 30mL (2 tbsp) water
Cheese Filling:
• 250mL (1 cup) cottage cheese
• 50mL (¼ cup) plain yogurt
• 50mL (¼ cup) brown sugar
• 5mL (1 tsp) vanilla
• Sliced toasted almonds for garnish, optional
Preparation:
Crepes:
1. Mix all ingredients in blender until smooth. Refrigerate at least 30 minutes.
2. Grease a 9” (22cm) crepe or frying pan with butter and heat over medium high.
3. Drop batter into hot pan and quickly swirl batter until it covers bottom of pan.
4. Cook until bubbles form, about 1 minute, turn and cook on other side until brown.
5. Continue with remaining batter.
Fruit Filling:
6. Combine fruit, sugar and juice in medium saucepan.
7. Bring to a low boil.
8. Combine cornstarch and water in small bowl and add to hot fruit mixture.
9. Cook on low, until fruit thickens, about 2 minutes.
10. Transfer to a bowl and refrigerate.
Cheese Filling:
11. Mix all ingredients in blender.
Assembly:
12. Place crepe on flat surface.
13. Spread bottom half with cheese filling, leaving about ½” (1cm) border from edges.
14. Top with fruit. Fold sides of crepe over filling and roll up starting from the bottom.
15. Repeat with remaining crepes.
16. Place on serving dish and garnish with sliced almonds, if using.
