Fiesta Tiramisu Trifle Recipe

Fiesta Tiramisu Trifle

No cooking is required for this quickly assembled make ahead dessert making it is easy on the cook. Ideal for holiday entertaining or a refreshing summer dessert, this is great for a number of guests.

Preparation Time: 30 minutes
Cook Time: 5 to 6 hours in refrigerator, or overnight
Serving: 8 to 12 servings

Ingredients:

•   600 g (1 bag) Europe's Best® Fiesta Tropical Blend, defrosted
•   175 mL (3/4 cup) Smucker's® Apricot Jam
•   50 mL (1/4 cup) lemon juice
•   250 mL (1 cup) whipping cream
•   250 mL (1 cup) mascarpone
•   75 mL (1/3 cup) orange juice
•   50 mL (1/4 cup) brown or granulated sugar
•   375 g (12 oz) store bought pound cake or lemon loaf, sliced

Garnish:
•   50 mL (1/4 cup) coarsely chopped pistachios
•   50 mL (1/4 cup) chopped white chocolate

Preparation:


1.  Cut Europe’s Best Fiesta Tropical Fruit Blend into bite-size pieces and place in a bowl. Gently stir in Smucker's apricot jam and lemon juice.
2.  In a large bowl, beat together cream and mascarpone until light. Beat in juice and sugar.
3.  To assemble trifle, in a large serving bowl, alternate layers of cake slices, fruit mixture and mascarpone cream, ending with cream. Cover with plastic wrap. Refrigerate 5 to 6 hours or overnight. Garnish with pistachios and chocolate before serving.

Make Ahead:
Trifle can be assembled and refrigerated for one day. The longer it stands the more moist it becomes.

Tips:

•   For individual servings, assemble trifle in stemmed or dessert glasses.
