Beans and Mushrooms with Garlic Breadcrumbs

Garlic butter is a popular flavour used to embellish escargot, breads and vegetables. Serve beans as a side dish with grilled seafood, chicken or cold meats.

Preparation Time: 15 minutes
Cook Time: 12 minutes
Serving: 4 to 6 servings

Ingredients:

•   500 g (1 bag) Europe's Best® Green and Yellow Beans, frozen
•   45 mL (3 tbsp) olive oil
•   30 mL (2 tbsp) butter
•   4 cloves garlic, chopped
•   375 mL (1 1/2 cups) sliced mushrooms
•   125 mL (1/2 cup) fresh or dried breadcrumbs
•   30 mL (2 tbsp) chopped fresh parsley
•   1 mL (1/4 tsp) chili flakes (optional)
•   2 mL (1/2 tsp) salt
•   1 mL (1/4 tsp) pepper

Preparation:


1.  Cook Europe’s Best Green and Yellow Beans according to package directions, until slightly undercooked. Drain well and pat dry.
2.  In a skillet, heat oil and butter over medium-high heat. Add garlic and mushrooms and cook 3 to 4 minutes. Add breadcrumbs, parsley, chili flakes, salt and pepper and cook 2 minutes until golden and crisp. Add cooked beans and toss to heat through and coat with breadcrumbs.

Tips:

•   Dried breadcrumbs will crisp faster than fresh. Panko(dried) breadcrumbs are a good pantry item. They are available in most supermarkets.

olive oil is not supposed to be used for high cooking temperatures. What is the highest to be used for vegetables?
