Roasted Sweet Potatoes with Brussels Sprouts and Bacon

Ingredients

1 lb (500 g) Brussels sprouts, halved

2 tbsp (30 mL) olive oil

2 cloves garlic, minced

1/4 tsp (1 mL) each salt and pepper

1 pkg (400 g) Europe’s Best Roasted Gourmet Sweet Potato Slices

4 tsp (20 mL) maple syrup

2 slices bacon, cooked and crumbled

2 tbsp (30 mL) finely chopped fresh parsley

Directions

  1. Preheat oven to 425ºF (220ºC). Toss together Brussels sprouts, oil, garlic, salt and pepper. Arrange in single layer on parchment paper–lined baking sheet.
  2. Bake for 20 to 25 minutes or until tender-crisp; add sweet potato slices to baking sheet. Bake for 8 to 10 minutes or until sweet potatoes are heated through. 

  3. Drizzle with maple syrup. Sprinkle with bacon and parsley.

Tips

Substitute diced pancetta or prosciutto for bacon if desired
